I spent more than a week in Orlando, but I didn't spend the whole time eating and lounging about.

I know many of you are assuming that I'm going to tell you that I won the Norman Mailer English Teacher writing contest, but I haven't heard back from them yet. However, I did win an award that I have coveted for some time.

As part of the rules of being a recipient, I have to post something random about myself. If you know me at all you know "random" is my middle name. It's like the creed that I live by.

So here's a little stream of conciousness/randomania for you...

My favorite app on my iPad is MyFitnessPal. After I plug in what I ate and which workouts I did, it tells me when I will reach my weight loss goals. It's more optimistic than I. It claims that I'll weigh 145 in 5 weeks! Whaaa? I sure hope so. Course everytime I have a cheat day on my diet, I'm sure I totally blow it. hahaha.

Last cheat day, I had lots of crap. Two little mounds bars. Chocolate chip pancakes. A packaged granola bar. A fruit and custard tart. A white chocolate chip cookie the size of a DVD. Ugh. I felt so sick after. Just GROSS.

Cheating is bad. On more than one level. hehehe.

Took a 3 hour nap today. Now, I'll never get to sleep tonight. I kinda wanna go for a walk with my kids too. Even though MyFitnessPal says I'm not eating enough calories to fuel myself. That's the thing about Paleo. It feels like I'm eating more than I should, but I'm just getting fuller faster, ya know? I'm not starving myself or anything. I definitely meet my caloric expectations most days.

Lane just showed me a tiny alien that her gramma gave her. It was wearing a tutu and roller blading. Lane said, "It's just like me." She wants roller blades for her birthday.

Did I tell you I'm going to Orlando again? My friend Lisa and I made arrangements, and I'm going out there in October for the Food & Wine Expo at EPCOT. We're also going to Universal and maybe shark fishing. I found a pretty good groupon for it. Just need to call and get some info. I really wanted to do the Survivor Mud Run while I was out there, but she WON'T run it with me. It's the kind of run you'd want to do with a friend so you could laugh your head off the whole time. Doing it solo would be kinda...meh. Then I saw this other run on a beach that would be beautiful, but it's a little too far away.

So I'm going to Orlando in...4 &1/2 weeks. Wow. That is soon. Hey, according to MyFitnessPal, I'll have reached my target weight by then. We'll see. I sure hope so, cuz I know I'll putting on some more weight at the Food & Wine Expo. YUM.

Miss me?

It's been a couple weeks since my last post, so there's a lot to catch up on. First off, here's how I spent the last weekend in August and Labor Day weekend in a picture montage:

Setting up my classroom before students arrived. My kids came with me once and this is what they did when I said, "act like students." Fitting.

Then they did this. Also fitting.

I took Lane to her first soccer game. They lost, but she never lost her enthusiasm.

Another game. They won. Doesn't she look great? I wish she loved soccer as much as I do. Maybe she'll come around.

I took the kids to the park too. Usually when Lane has practice, Vin and I will run around the fields and kick the soccer ball around until he gets bored and wants to play at the park. Then I fly solo.

Boating on Salem Pond with my family. Weather turned bad fast, so they didn't get to boat very long.

Grandpa taking kids out on the water. We all learned how to fish this summer and were practicing at the pond too. No one caught anything.

Riding bikes at the park on Labor Day. You can't see it very well here, but the trees in the mountains are starting to turn fall colors already! It's gorgeous. It's the perfect time to hike in the canyon.

This is how I feel after a good workout.
Workouts over the last couple weeks:



Thurs., Aug. 23rd: 4.4K or 2 & 3/4 miles. (I track these workouts on  my phone with SportsTracker. I highly recommend the app. The only thing I don't like about it is that it doesn't do the conversions to miles. I have to do that online.)
Sat., Aug. 25th: 35 min. 4 x 4 workout + "sexy legs" workout from Pinterest.
Tues., Aug. 28th: Soccer training for 35 minutes.
Wed., Aug. 29th: 6.48K or 4 miles.
Sat., Sept. 1st: 45 min."tank top arms""sexy legs" workout from Pinterest
Mon., Sept. 3rd: 7.41K or 4 & 1/2 miles.
Tuesday, Sept 4th: Soccer training for 49 minutes, a total of 4.22K or 2 & 1/2 miles.



Paleo Chocolate Chip Cookies

I added coconut and pecans to the recipe. Kids loved them.

Paleo Week 2: Results

I finished week 2 of paleo, and I'm pretty happy with the results. 

Pre-Paleo Measurements:

Weight:164 lbs.
Waist: 31 & 1/2"
Hips: 44"
Thighs: 26 & 1/2"
Arms: 12"

Paleo Week 2 Results:

Weight: 160 lbs.     [- 4 lbs.]
Waist: 29 & 3/4      [- 1 & 3/4"]
Hips: 43"                [- 1"]
Thighs: 25 & 1/2"   [- 1"]
Arms: 12"               [ - 0]

Workouts this week:


Monday: Ran 4.5 miles and walked .5 on the treadmill.
Tuesday: Soccer training for 45 minutes
Wednesday: 20 min. "sexy legs" workout from Pinterest.
Saturday: Interval training: 5 min. "sexy legs", 5 min. running, 5 min. arms, 5 min running. Then repeat.

What we ate:

dry rub crock pot chicken (not cooked yet and on a bed of onions)

stuffed baked peaches
Peaches were stuffed with raisins, nuts, chopped apples, and cinnamon.

veggie meatballs (way tastier than they look)



banana slices, topped with a banana/almond butter/blueberry paste, and topped with a blueberry, then frozen. Kids loved this treat.

Eating healthy snacks at the pool on my last day of summer before I had to go back to work.

Paleo Week 1: Results

At the beginning of my 1st Paleo week, I took measurements.

Pre-Paleo

Weight: 164 lbs. [Yes, I've put on some weight over the last several months. In January, I weighed 151, so this increase is really disheartening. I'm a stress eater, and it's been a ROUGH summer. I had 3 conferences back-to-back in June, and I started therapy this summer. And now, the school year is starting again on Thursday, so that's a barrel of stress. I sure hope Paleo helps me get my life back...and by the looks of it so far, it is.]

Paleo Week 1 Results

Workouts this week:

Saturday: 10K
Monday: Last Chance Workout Cardio DVD for 40 minutes

Thursday: Soccer training for 35 minutes

The 10K was technically last Saturday, but I'm still hella proud.


What we ate:

Most recipes were found from Everyday Paleo by Sarah Fragoso. However, I did find some recipes online. Links below.

Breakfasts:

 I ate bacon, eggs, and/or sausage for breakfast everyday, but I didn't want it to get boring, so I try variations of everything. Like egg-in-the-hole with zucchini instead of bread. Or a frittata with whatever veggies I have. Or bacon wrapped egg muffins. (I used this recipe, but minus the cheese and add chopped zucchini and rosemary.

Lunches:

 I picked out 6 dinners from the Paleo cookbook. Each one had leftovers, which we used for lunches. But when that didn't always work, we ate pork chops, chicken, salads, roasted garlic tilapia (click me for recipe), collard-wrapped tilapia, etc.

Dinners:

Paleo Speghetti, Paleo Chili, bun-less hamburgers, crockpot chicken, crockpot pork chops, and pan fried cinnamon pork chops.

"Cheat" Day:

On Saturday, I let everyone eat what they wanted all day. It was the incentive for the kids. If they ate well all week, then they got a "cheat" day at the end of the week.

I was going to give them a healthy breakfast at least, but I was out of eggs and bacon, so I made them grilled cheese. About a half hour later, my vision was blurry and I was dizzy and nauseated. The kids didn't seem to notice anything.

For lunch I took them to The Spaghetti Factory (I won $20 in gift certificates at the 10K and Lane had a free kid's meal from her school, so it was very economical.) I ordered meatballs, no pasta, b/c I didn't like the way I felt from breakfast's carbs. The kids ordered ravioli and spaghetti with meatballs. Lane ate all of the ravioli and complained of a stomach ache. Vin ate the meatballs and a couple of bites of spaghetti; he didn't seem to want the carbs. Rick had ravioli too and 3 glasses of milk. Milk was what he missed the most, he said. Then dessert came (all entrees at the Spaghetti Factory come with a little scoop of ice cream). Lane ate hers, determined to "cheat" to the fullest. Vin ate a third and didn't want anymore. I ate a third and couldn't eat anymore. Rick didn't eat any and got so sleepy from the milk and carbs that he couldn't keep his eyes open. I had to drive us home. Vin fell asleep on the way home and Rick took a nap when we got home. Rick looked bad. Really bad. His eyes were droopy and his face looked grey. He wasn't even making much sense verbally. It was as if his words and brain were off a few seconds. SO WEIRD.

Fast forward to dinner. I spent the rest of the night fighting a headache from eating a few slices of sourdough bread at the restaurant. So I ate Paleo for dinner.

Rick took the kids to the demolition derby in SLC. Vin took another nap on the way there. Rick didn't eat anything, b/c he felt so sick, and the kids ate nachos. Lane seemed ok, and both kids slept on the way back.

If you were counting, my 4yo took THREE naps on "cheat"day. Three. What the what?

I'm telling you, there's something to this diet. I knew I would feel better when eating healthier, but the contrast of eating processed, carby foods after being clean for a week was NIGHT and DAY.

Rick says he never wants a "cheat" day again.
I'm good with that.

Going Caveman (Paleo)

Paleo Spaghetti. Noodles are from a spaghetti squash.
I've gone Paleo. The whole family has.
At least for a month.

What is Paleo?

No processed foods (at least as little as can be helped under the other parameters.)
No sugar, unless natural
No carbs, unless in fruits and veggies
No dairy.

What can we eat? 

Meats: chicken, pork, beef, etc.
Seafood
Some oils (olive and coconut)
Veggies
Fruit
Nuts
Seasonings

Recipes I've tried thus far:


Paleo Spaghetti. Whole family loved.

Bacon-wrapped eggs with zucchini and dill. One of my faves.

Salmon with dill wrapped in zucchini. Kids loved.

Zucchini boats. Paleo, if you don't sprinkle it with Parmesan.

Pre-paleo, but works minus the cheese. This is zucchini lasagna.
I've also made Spice Rub Crockpot Chicken, Apple Shallot Pork Chops, Paleo Chili, Collard-Wrapped Tilapia, and Easy Spinach Salad. (No pics as yet.)

 Why? 

Paleo is supposed to help reduce the symptoms of depression and other mental disorders.
It is supposed to help a person focus better when learning. 
It frees a person of their carb and sugar addictions.
It reduces snacking to nothing. Seriously, I haven't even wanted to snack since I started. Every meal fills me up.
It's healthier to eat unprocessed foods. DUH.
I'm teaching my kids to eat better, b/c I don't wanna be one of those moms who sends their kids to school hopped up on sugary cereals. I don't wanna do that to teachers anymore. And, I don't want my kids to be faced with diabetes in their 20s like I was.

Affects on kids?

They were fine the first 2 days, then the complaining started, b/c they were detoxing from all of the chemicals and additives in their pre-paleo diet.
Sometimes they miss their go-to snacks, cereal, and bread. If they finish their meals they don't want snacks, but if not...
Vin keeps stealing my old food when I'm not looking, so I'm not sure yet about his affects. 
They don't have sugar crashes anymore.
Lane at soccer practice. She's in maroon. The one that looks like a natural born soccer player.
Lane doesn't seem as hyperactive. She did excellent at soccer practice. Didn't get tired or grouchy.
At 7 yo, she looks like she belongs out there. Maybe she'll get a gold medal one day like the US Women's Soccer team. =)

My results?

I've lost 2 lbs.

Rick's results?

Looks thinner. Clothes are fitting better. He's not weighing in until the week is over.
